Moonlight White Bing (月光白小餅, Yuè Guāng Bǎi Xiǎo Bǐng) – The Silver Leaves of Night
A Western version the classic White Peony (白牡丹) tea from Yunnan, this tea is made from leaves that are air dried instead of cooked. The name stems from the silver leaves interspersed amongst the black leaves. Legend holds the silver is from moonlight captured by the leaves as they air dry outside during the night.
